  1. Cook beetroot, potato, onion & celery with olive oil in a large pot over medium heat for 10-15 minutes until slightly softened.
  2. Add the veggie stock into pot, bring to boil & cook for 30 minutes until beetroot & potato is crumbly, then add to blender or use a handy blender & blend until smooth.
  3. Serve hot with sour cream & garnish with fresh dill.
