Herb Citrus Roasted Chicken – Best Healthy Lunch & Authentic Fast Food Recipe

  1. Preheat oven to 400 degrees.
  2. Leave the skin on the chicken thighs but trim off any excess skin or fat and set aside.
  3. In a medium mixing bowl add orange, lemon and lime juice. Whisk in olive oil, minced rosemary and thyme leaves. Add in chicken and toss to coat in juice and spices.
  4. In a 8×8 casserole dish add citrus slices to the bottom.Β Place chicken onto the top of the citrus slices and pour marinade over the chicken.Β Season the tops of the chicken with kosher salt and pepper.
  5. Roasted for about 60 minutes until the top of the skin is crispy and the chicken is fully cooked or has reached 160 degrees.Β Remove chicken from the oven and let rest for 5 minutes and serve hot.
