  1. For the pastry, mix the flour, sugar, almond powder and salt. Take a can and place in the center temperate diced butter and egg yolk. Knead until the dough forms a smooth ball. Let the dough rest at least 30 minutes in the fridge, wrapped in cling film.
    Spread the pastry & fillΒ mini muffins molds. Prick with a fork. Let stand at least 2 hours charge.
    Bake 20 minutes at 180 Β° C (gas mark 6). Let cool 10 minutes.
  2. Put the chocolate melt in a double boiler, add the gelatin leaves softened in cold water and drained. Then add the egg yolks one at a time while mixing well.Β Mount the egg whites with a pinch of salt, then stir them gently with chocolate.
  3. Pour some mousse in the pie shell. Drain the pears, cut them into pieces and spread them in the mousse. Pour the remaining mousse to fill up the pie.
