  1. For the pastry, mix the flour, sugar, almond powder and salt. Take a can and place in the center temperate diced butter and egg yolk. Knead until the dough forms a smooth ball. Let the dough rest at least 30 minutes in the fridge, wrapped in cling film.

  3. Pour some mousse in the pie shell. Drain the pears, cut them into pieces and spread them in the mousse. Pour the remaining mousse to fill up the pie. Place in the fridge at least 6 hours, 1 night is even better. Crumble shortbread chocolate and cover the mousse to make the earth. Just before serving, “plant” in the mint sprigs center, chives, thyme ….
