  • Sugar -30g
  • 2 Egg yolks
  • 1 Vanilla pod
  • 125g Mascarpone
  • 2.5 to 2g gelatine or agar
  • 175g Whipping cream

* Pistachio Mousse

  • 100g Mascarpone
  • 1 Eggs
  • Sugar -1CS
  • Pistachio paste -1CS
  • 1 Gelatin leaf or 1 g of agar

* The biscuit base:

  • 1 Small 30g butter
  • Melted butter -90g
  • Unsweetened cocoa -2cc

* Chocolate Icing

  • Chocolate -125g
  • 125g Whipping cream
