  • 4 raw scampi, butterflied with shells intact
  • 8 green [raw] tiger prawns, heads removed & tails intact
  • 500g clams
  • 6 cloves garlic, crushed
  • 4 sprigs tarragon
  • 2 green onions [scallions] thinly sliced
  • salt & pepper to taste

Herb toast:

  • 40g unsalted butter, softened
  • 1 tablespoon finely chopped flat-leaf parsley leaves
  • 1 tablespoon finely chopped tarragon leaves
  • 6 slices baguette
